Oyster Mushroom + Rosemary + Thyme Scones
- 1 cup Whole Wheat Flour
- 2 cups White Flour
- 1 ½ Tbsp. Raw Honey
- ½ tsp Baking Soda
- 2 ½ tsp Baking Powder
- 1 tsp Salt
- 2 tsp Fresh Rosemary
- 1 tsp Fresh Thyme
- 5 Tbsp. Melted Coconut Oil
- 1 Cup Chopped Oyster Mushrooms
In a mixing bowl add the dry ingredients. Then mix in the coconut oil and honey. I make it a goal of using as little added sugar as possible. You may find that you like a little extra honey. Go ahead. The additional fiber in the whole wheat flour will slow absorption, so your blood sugar doesn't spike.
Once the dough is even throughout, fold the herbs and mushrooms in. Split the dough into 6 or 8 even pieces. Form the dough into a scone shape.
Bake at 350 until golden brown.
